Q. Culinary school trained or self-taught?
A. Self taught through a lot of years behind the stove learning under some great chefs.
Q. What is your favorite food from your childhood?
A. My Mom’s French Toast for sure. I’d ask her to make it for breakfast, lunch and dinner sometimes.
Q. What dish would you recommend to someone that has never eaten at Beer Belly?
A. The Fried Chicken Cuban at Beer Belly Long Beach.
Q. Favorite kitchen appliance and why?
A. My Robot Coup because without it I’d be shredding cheese with a hand grater and making aiolis with a whisk, which is the way I learned and how we did it when Beer Belly started, but with the volume we do now all my cooks would have one arm that was bigger than the other from all the grating and whisking.
Q. Your worst kitchen experience?
A. Being a young line cook and being so in the weeds that all you want to do is cry, but you have no choice but to push through it. It’s always the worst at the time but it teaches you a lot in the process.
Q. Ultimate fantasy meal – what, where and with who (living or dead)?
A. Eating fresh made Pasta Bolognese with Frank Sinatra in Las Vegas.
Q. Fun fact about yourself?
A. I’m the lead vocalist for Kill Verona, a nationally known punk rock band from Philadelphia. We just recently re-formed the band and are putting out our new record on July 27th.
Q. Something in your fridge or freezer that would surprise people?
A. Gluten-free bread. I eat a lot of that at home with almond butter and cinnamon. One of my favorite snacks.
Q. What are your guilty pleasures?
A. The need to try every pizza place I see.
Q. What’s on your Bucket List?
A. To fill the bucket with great memories no matter where I am or who I’m with.
