Q. Culinary school trained or self-taught?
A. Twelve years in the industry before moving to California to attend The Art Institute of California, Orange County.
Q. What is your favorite food from your childhood?
A. It may be more of the memory but having Peanut Butter and Vidalia Onion sandwiches with my grandmother.
Q. What dish would you recommend to someone that has never eaten at Delius Restaurant?
A. Our 12oz Pork Porter House with Smoked Black-eyed Pea and Stone Fruit Ragout, Seared Red Cabbage and a Balsamic Reduction.
Q. Favorite kitchen appliance and why?
A. Industrial Hobart Legacy Floor Mixer! There is nothing like mixing a big batch of dough and smelling the yeast metabolize as it rises, and the fact that the hook does all the work!
Q. Your worst kitchen experience?
A. Being a woman in this field presents its own set of challenges. When I was branching out in this industry, I was unfortunately cornered in walk-ins by male co-workers, groping and lewd comments. And even worse it wasn’t just one job. It was multiple. But I have never been a shrinking violet and I always stood my ground and defended myself. But there were a couple of jobs I walked away from in the beginning because of those moments.
Q. Fun fact about yourself?
A. I wear multicolored Toe Socks to work every day.
Q. Something in your fridge or freezer that would surprise people?
A. Spoons! They work wonders on tired eyes!
Q. What and where would we find you eating on your day off?
A. Sunday morning, At home with my Mister, Michael, trying out new creations for breakfast.
Q. What are your guilty pleasures?
A. Karaoke! I sing at least twice a week! A long time ago I used to Karaoke Jockey. It is a wonderful stress reliever!
Q. Ultimate fantasy meal – what, where and with who (living or dead)?
A. I am a very sentimental person and so I would have to say, a lavish cheese plate, by the step water falls of Rock Creek back in Illinois with my Mother. She is sorely missed!
