Q. What is your favorite food from your childhood?
A. Mexican food, especially enchiladas and seafood.
Q. What and where would we find you eating on your day off?
A. Fresh seafood in Tijuana Mexico.
A. Our Duck Chili – because it’s unique.
Q. Favorite utensil in the kitchen?
A. Not exactly a utensil, but my prep table, because I can keep an eye on all my cooks.
Q. Fun fact about yourself?
A. Always working, although my wife would not think that’s fun!
Q. Five things you can’t live without in the kitchen?
A. My coworkers, Robot Coupe, great knives, laughter and music.
Q. What’s on your Bucket List?
A. To open my own cafe someday.
Q. What are your guilty pleasures?
A. I love meat! I can eat meat all the time.
Q. What do you like to do outside of work?
A. Sleep, drink, eat… and not think about work.
Q. If you died tomorrow, what dish would you be remembered for?
A. Corned Beef – because I cook 120 lbs a week of it!
